Clerico Barolo Ciabot Mentin Ginestra 2021
Sourced from one of the core, historic vineyards of the Clerico family in Monforte d’Alba. The 2021 vintage is structured and complex, opening with aromas of dark red fruits, rose petals, licorice, and mineral undertones. On the palate, it is powerful yet elegant, with tight-knit tannins and a vibrant acidity that promises excellent aging potential.
The Unforgettable Pairing: Barolo & Cantonese Delicacy
A classic pairing of contrasts and complements. The rich, savory umami of the braised abalone and oyster sauce balanced beautifully with the 2020 Barolo del Comune. The wine’s bright acidity cut through the richness of the dish, while its notes of dark cherry, earthy forest floor, and refined tannins mirrored the depth of the shiitake mushrooms.
