Vintage 2022
The 2022 vintage marks a pivotal year for Domaine Dujac, being the first produced in the new winery, which has significantly improved temperature control and offered more space for winemaking.
Jeremy Seysses adhered to the principle of “vendanges tôt, vendanges tôt,” starting the harvest early, from August 30th in Puligny-Montrachet to September 8th, with yields being generous and relatively even. Typical yields stood at 45 hl/ha for the crus and 50 hl/ha for village wines, with alcohol levels ranging from 12.8% to over 14%.
While the timing mirrored that of 2018, the style of wine diverged. To adapt, Jeremy and Diana implemented fewer punchdowns and pressed earlier, reducing cuvaison to 11-13 days. Improved cooling capabilities resulted in slower fermentation.
Most wines were crafted using about 85% whole bunch vinification. Though acidity levels in 2022 are not high, Jeremy noted an interesting trend: in the 1990s, grapes showed lower pH at harvest but higher levels post-pressing due to potassium release.
Overall, the 2022 vintage promises exceptional quality, combining tradition and innovation, reflecting the unique attributes of this remarkable year.
