Nicolas Rossignol, born in 1974, is the fifth generation of winegrowers in Volnay. Since starting vinification in 1994 at the family estate, he has cultivated a legacy rooted in tradition and quality. His approach blends traditional winemaking techniques with biodynamic principles, emphasizing reasoned viticulture that respects lunar influences.
Harvesting is done by hand, ensuring minimal handling and optimal grape quality. Each bunch is carefully sorted to remove impurities before entering the vinification process. Here, natural yeast initiates fermentation, monitored closely to enhance flavor extraction through techniques like punch-down and pump-over.
Ageing takes place over 10 to 20 months on fine lees, with careful selection of casks to match the terroir. This method, combined with delayed malolactic fermentation, enriches the wine's complexity. Nicolas Rossignol's commitment to excellence results in wines that truly reflect the essence of Burgundy.
