Mounir studied Viticulture and Oenology and worked in wineries in and outside of France. Rotem learned Agriculture in Dijon. They started Lucien Le Moine together in 1999 as a micro-negociant operation. The estate only produces Grands and Premiers Crus from Côte d’Or. Quality over quantity is the principal, thus they never produce more than 100 barrels (30,000 bottles) each year. Wines go through slow fermentation and certain lees contact in order to express the distinctive character. In 2009, they even expanded their profile to Chateauneuf du Pape and produce reds and whites.
