Bernard Billaud sold his estate to Domaine Faiveley of Nuits St Georges in 2014. Billaud-Simon has long been the source of excellent, reliable, and hugely enjoyable Chablis, and continues to be so under Faiveley's ownership. Its new owners have been renovating the charming château and have installed Savigny lès Beauneborn Olivier Bailly as régisseur. He is gradually implementing small but precise changes in the winemaking style: tuning down the oak, particularly in the grands crus, and using innovative stainless steel barrels alongside traditional oak barrels. These allow him to vinify in the small volumes he likes, with the lees contact of traditional barrels but without any of the adorning oak flavouring, nor the oxidative élevage.

All of the parcels at Domaine Billaud-Simon are planted within a two kilometre radius, on the left and right banks of the Serein, in the heart of this historical appellation. The Domaine currently counts four Grands Crus (Les Clos, Vaudésir, Les Preuses and Les Blanchots) as well as four Premiers Crus (Montée de Tonnerre, Fourchaume, Mont de Milieu and Les Vaillons). It also produces the Chablis “Tête d’Or”. This prestigious cuvée is made from a blend of the village’s highest quality parcels.

Billaud-Simon’s exceptional quality vieilles vignes (old vines) are carefully tended to and enhanced by the domaine’s team.

According to each vintage and thanks to trustful partners, Billaud-Simon is also producing Petit Chablis and Chablis, “Vaulorent” 1er Cru as well as two Grands Crus : “Valmur” and “Bougros”

The bicentenary Domaine Billaud-Simon nurtures and cultivates vineyards of exceptional quality planted mainly with old vines with an average age of 50 years that have been carefully tended to and preserved over time. The grapes are left to ripen slowly as patience is the key at Domaine Billaud-Simon. From the vineyards to the cellars, they work with rigor, dedication and skill in order to produce outstanding Chablis wines.
