A truly memorable night unfolded at Hansik Goo as we joined Xavier Sanchez, Commercial Director of AXA Millésimes, for an exclusive dinner that artfully blended the world of prestige wines with modern Korean fine dining.
The highlight of the evening was an exceptional vertical tasting of Château Pichon Baron, including coveted back vintages such as 2010 and the legendary 1989. Each glass showcased the estate’s uncompromising pursuit of harmony and depth—from the stately power and explosive palate of the 2010 to the spectacular sophistication and velvety tannins of the 1989, brimming with dark fruit, graphite, and endless length. These iconic Pauillac wines, matured to perfection, were the perfect match for Hansik Goo’s inventive dishes, like doenjang-marinated lamb chops, ginseng chicken roulade, and delicate Jeju abalone rice.
Guests also indulged in the finesse of Château Suduiraut’s Grand Vin Blanc Sec and Quinta do Noval Porto Vintage 2015, completing the journey with balance and elegance. Throughout the evening, every pairing celebrated the philosophy of AXA Millésimes: preserving cultural heritage and terroir excellence, all while delighting the senses.
